Recipe: Steel-Cut Oats with Almond Butter, Chocolate, and Frozen Berries (GF, V)

Each ingredient in this recipe gives adds a distinct, irreplaceable flavor. The coconut milk makes the oats totally creamy; the almond butter adds a nutty taste; the dark chocolate makes it rich, and the frozen berries add texture and sweetness. This truly is the breakfast of champions!

As mentioned in my peanut butter banana oats, oatmeal rocks because it keeps me full until lunchtime. I don’t have to worry about being hungry! Additionally, dark chocolate is a great source for magnesium, iron, fiber. It’s good for your heart, too, and helps protecting your skin and reducing your LDL (“bad”) cholesterol.

Steel-Cut Oatmeal with Toppings

Serves: 3


  • 1 ½ cups water
  • 1 ½ cups coconut milk
  • ¾ cup dry steel-cut oats
  • 1 cup frozen mixed berries
  • 6 tsp. almond butter
  • 1 ½ tbsp. chopped dark chocolate*


In a medium to large saucepan, bring the water and coconut milk to a boil. Once boiling, add in the steel-cut oats. Let simmer for about 20-25 minutes, until you’ve reached your desired consistency. Be sure to watch the pan because the milk can easily overboil! Pour into three bowls, and add in ⅓ cup frozen mixed berries on the side of each bowl. Top each with 2 tsp. of almond butter. Sprinkle on ½ tbsp. of chopped dark chocolate in each. Enjoy!

* I like 85% cacao. Use whatever you like the best!
