Recipe: Salty & Sweet Peanut Butter Cookies

Ah, there’s not much I love more than peanut butter. It’s creamy, rich, and totally satisfying. Plus, it’s packed with protein, potassium, and fiber! Therefore, I found it necessary to make these delicious peanut butter cookies. They’re 100% whole wheat and vegan! No guilt here.

I LOVE serving (and eating) these cookies with a glass of milk. Nothing better than a warm cookie dipped in cold milk. It is literally heaven.

Salty & Sweet Peanut Butter Cookies

Yields: 18-22 cookies

  • 1/2 cup whole wheat flour
  • 1.5 tsp. baking soda
  • 1 cup peanut butter
  • 4 tbsp. brown sugar
  • 2 tbsp. honey
  • 4 tbsp. apple sauce
  • 1 tsp. pure vanilla extract
  • Large pinch of sea salt

Preheat the oven to 350 degrees F.

Combine flour and baking soda in a medium bowl.

In a separate large bowl, using an electric mixer to stir the peanut butter, brown sugar, honey, apple sauce, and vanilla extract.

Gradually add in the flour mixture. You may have to switch to a large spoon or spatula to do so.

Create 1-inch thick cookie balls using the dough. Place on a baking tray, and bake for 8 minutes. With just a couple of minutes to go, use a fork to slightly flatten the cookies.

As always, enjoy.
