I could never get myself to be a fan of raw broccoli. To me, it is flavorless and hard to chew. That being said, my family loves raw broccoli with hummus or some kind of dressing/dip. Ever since I was young, I’ve loved steamed broccoli.
Now, I am trying a different way to enjoy broccoli. Roasted! It is so amazing and utterly flavorful—I love the simple touch that salt & pepper add, and the juice from the lime creates an incredible mix. Lastly, the olive oil establishes a wonderful *crispy* texture.
Without further ado, here is my recipe for olive oil roasted broccoli with lime.
How to Make Roasted Broccoli with Lime
- 1 large bunch of broccoli
- 2-3 tablespoons olive oil
- Juice of 1 lime (or 1/2 lemon)
- Salt and pepper, to taste
Preheat oven to 425 degrees F. Wash your broccoli and cut into whatever size pieces you want.
Place on a baking sheet and drizzle with olive oil. Sprinkle on salt and pepper.
Roast in oven for 20 minutes, flipping after 10. Evenly squeeze on lime juice. Serve immediately and enjoy!
Optional: Add minced garlic to your broccoli before roasting it in the oven!
