Recipe: Blueberry Walnut Muffins (V)

These are utterly delicious and a healthy way to start your morning. Although, enjoy these muffins at any time of the day; they are great for the morning, of course, afternoon, and even a late-night snack. Recently I have been loving adding walnuts to everything, seriously. Check out these Chocolate Energy Bites and/or this banana bread with walnuts & chocolate chunks.

Blueberry Walnut Muffins


  • 1 cup oat flour *
  • 1/2 cup buckwheat flour
  • 1/2 cup whole wheat or all-purpose flour
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground nut meg
  • 1/4 tsp. sea salt
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 cup brown sugar
  • 1 cup unsweetened applesauce
  • 2 tbsp. maple syrup
  • 1 cup fresh blueberries
  • 1/2 cup walnuts, lightly chopped

* Make this yourself by using a blender or food processor! Simply grind rolled oats until they reach a flour-like consistency.


Preheat oven to 350 degrees F.

In a large mixing bowl, combine all flours, all spices, and the baking powder + soda.

In a smaller bowl, combine the brown sugar, applesauce, and maple syrup.

Pour the wet mixture into the dry ingredient mixture. Stir.

Fold in the blueberries and walnuts.

Bake for 20 minutes. Let cool for a few minutes before enjoying.

P.S. I love eating my muffins with some butter! You can also add honey or almond butter on top 😋😋
