Recipe: Almond Butter Pancakes with Chocolate Chips (GF, V)

Recently I have been adding walnuts to, essentially, everything. They are awesome to sprinkle on salads, mix into cookies, and even top on homemade pizzas. Walnuts give a nutritional boost and add an amazing texture & flavor. Read about the health benefits of nuts here!

These pancakes are vegan, gluten-free, and totally satisfying. They taste nutty, sweet, and delicious. Read below for what I like to top my pancakes with ❤

Pancakes with Almond Butter and Chocolate Chips

Ingredients

  • 0.5 cup unsweetened almond milk
  • 1.5 tsp. apple cider vinegar
  • 1.5 tsp. pure vanilla extract
  • 1 tsp. pure maple syrup
  • 1.5 tbsp. almond butter
  • 0.5 cup buckwheat flour
  • 3 tbsp. rolled oats
  • 1 tsp. baking powder
  • 0.25 tsp. sea salt
  • 3 tbsp. chocolate chips
  • 3 tbsp. walnuts, lightly chopped

Directions

In a small bowl, whisk together the almond milk, vinegar, vanilla extract, maple syrup, and almond butter. Be sure to whisk well so there are no clumps.

In a larger bowl, stir the flour, oats, baking powder, and sea salt.

Add the wet mixture into the dry. Mix well.

Fold in the walnuts & chocolate chips. If needed, add some milk to thin out the batter.

Grease a skillet (coconut oil works best for me) and begin to heat. Use a ladle and cook as you would any pancake.

Note: These are best enjoyed right away! Add blueberries, sliced bananas, honey, and/or maple syrup on top 😍

If eating leftover, I always pop my pancake in the toaster so they are crunchy rather than soggy! No one likes a soggy pancake.
