Recipe: Ginger Banana Bread (V)

Yes, I know. Yet another banana bread recipe. This one is amazing, and perfect for the season! Click here for a classic banana bread, here for one with protein, and here for a pumpkin banana bread.

You must try the banana bread ASAP. It is vegan, mostly gluten-free, and contains no refined sugar. Banana breads are super easy to make “healthy” because mashed banana provides perfect sweetness & moisture.

Ginger Banana Bread

  • 1.5 cups barley flour
  • 1/2 cup bread flour
  • 3/4 tsp. salt
  • 3/4 tsp. baking powder
  • 1/4 tsp. nutmeg
  • 1/2 tsp. allspice
  • 1 tsp. baking soda
  • 2.5 tsp. cinnamon, ground
  • 2 tsp. ginger, ground
  • 1.75 cups mashed banana
  • 1.5 tsp. pure vanilla extract
  • 1/3 cup plant milk
  • 1/4 cup maple syrup
  • 1/4 cup molasses
  • 1.5 tbsp. rice vinegar

Note: You can substitute maple syrup for honey or agave! In addition, feel free to add chopped nuts or chocolate chips to the bread.

Directions

Preheat oven to 350 degrees F.

In a large bowl, combine the dry ingredients (barley flour, bread flour, salt, baking powder, nutmeg, allspice, baking soda, cinnamon, and ginger).

In a medium bowl, whisk together the wet ingredients (mashed banana, vanilla extract, milk, maple syrup, molasses, and rice vinegar).

Add in the wet to the dry. Stir together!

Grease a 9 x 5 in. pan. Be sure to grease the sides, too.

As for the baking instructions, they are pretty specific: Bake for 33 minutes. Turn off oven, but keep the bread inside for another 10 minutes. Let cool before serving!
